The Great Puffinski

This delicious little breakfast treat is a mix between pancakes and Do-Nots (a.k.a.doughnuts)

With some slight variations, the batter can be flavored or as is. They can be topped with nothing more than powdered sugar or loaded up with cinnamon/sugar, fresh fruit toppings, crushed nuts and dried fruit… you name it, the Puffinski is literally made for customizing!

Start by preheating your oven to 425. You can prepare this dish in a normal sized cast iron skillet, in the oven…. or as I’ve found to be a true Puffinski, in a cupcake/muffin pan. If made in a skillet, this recipe should yield one large puffinski that serves 2-4.

For my family of (5), I normally double the recipe and it yields approx (2) doz. Muffin sized Puffinskis. Besides doubling the recipe, I mix in 1/4 cup of brown sugar with 1 3/4 sugar.

 

  • (1/2) cup milk
  • (1/2) cup all-purpose flour
  • (1/4) cup sugar
  • 2 eggs (at room temperature)
  • (1/4) teaspoon pumpkin spices (optional)
  • (1/4) teaspoon cinnamon sugar (optional)

In a separate bowl or measuring cup, melt:

  •   (4) tablespoons (1/2 stick) of butter

 

Place approx. 1/4 teaspoon of the melted butter into the bottom of each muffin cup. I use my fingers to smooth the butter all around the inside of the muffin cups, but a little bit pools in the bottom… this makes for a nice “cup” or indentation for filling when done.

 If making with the skillet, place all the butter into the bottom and make sure to tilt around the pan to spread evenly.

 Place in the oven for 12-15 minutes.

When golden brown on the raised edges and lightly on top, remove and serve immediately, because the Puffinski quickly becomes a Un-Puffinski right before your eyes. The drama…..

Adorn with powdered sugar, and/or whatever additional toppings you see fit.

Some optionals are:

Fresh blueberries, strawberries, raisins and walnuts, pecans, chocolate ships, crushed nuts and honey, maple syrup or just experiment. These things are so versatle and fun. You could even have all the toppings ready before hand, and have a taste test breakfast, the Puffinski way!
